Assessment of Quality Characteristics of Organic and Conventional Sugarloaf Pineapples (Ananas comosus, ananas) Under Cold Storage

Fresh pineapple is an excellent source of vitamin C and there a big demand for organically produced sugar-loaf pineapples in Europe. However, due to its high moisture content perishability, transportation over long distances difficult require cold storage conditions. The main objective this research was assess the quality properties organic conventional sugar loaf under conditions 21 – day period. Conventional were harvested from Albe Farms Eastern region Ali farms Central regions Ghana. fruits allowed cool room temperature before storing at 1°C. Physical chemical determined days 0, 7, 14 21, using standard methods. larger, but had lower dry matter, soluble solids C, than pineapples. weight, translucency pH two categories similar. No significant loss lengths crown characteristics observed after Translucency increased <25% range 50 75% by end period both fruits. While no clear trend during sugarloaf pineapple, total titratable acidity marginally levels dipped 21-day trends acidity, suggest that it possible store 1 °C. This implies possibility shipping destinations requiring sea freighting.
